Recently I attended a company party where everyone brought a homemade dish to share. There were a variety of desserts, from apple pie, cheesecake and coffee cake; to danishes, coconut cookie bars and brownies.
By far, my favorite dish from the night had to be the coconut cookie bars. It won me over with the creamy consistency, coconut crunch and the delicate nutty flavor. Not to mention the perfect amount of chocolate chips on top. Yum!
Today, I'm sharing the recipe of these delicious coconut cookie bars. I hope you enjoy them as much as I do!
